Sunday Prep

Here is how I spent my Sunday:

I scrubbed and boiled 3 large beets.

I peeled, diced, and froze one mango for smoothies (yielded 4 smoothie portions).

I washed and chopped beet greens - to make a tasty sauté!

I chopped dried apricots and cashews.

I assembled an energy bar mix and placed it into the freezer to set.

I puréed my beets into hummus. And it was good.

I simmered and puréed lentils with chopped garlic, cilantro, and olive oil. A yummy dip!

I added breadcrumbs and the dip became fritter dough.

I tossed whole wheat naan with butter, olive oil, and a heap of garlic and toasted it in the oven to make chips for my hummus.

Ryan and I enjoyed lentil fritters with cabbage, cilantro, and greek yogurt, adapted from this recipe, while watching the Oscars. And it was good.

For me, the key to cooking healthfully throughout the week is doing the prep work on Sunday.

This may include:

-Preparing the menu (the best part) and the grocery list (which simply must be hand-written).

-Braving the church crowds at the grocer/market, cheesemonger, co-op, and/or butcher (alas, lately it's been primarily the grocer).
-Chopping veggies. You wouldn't believe how much time is saved by utilizing a pre-chopped, peeled sweet potato sitting ready to go in the fridge.
